What I Ate Wednesday
Happy Wednesday my friends! Can you believe it's almost August?! Crazy how quickly time is flying! This is the last week of Nick and I living in Clearwater. We move to St Pete next week into a temporary apartment while we try to find a house to buy in St Pete! August will be an interesting month so I am trying to soak in every last minute of things being normal for one last week :)
This day of eats is from this past Monday...and started off with the usual pint of lemon water and a shot of diluted apple cider vinegar. I then had a pre-workout coffee (coffee blended with salted caramel BCAA's, coconut cream, almond milk and maca powder) and ate 1/2 of a yogurt for pre-workout fuel since we were all out of bananas.
When I got back, I had a smoothie bowl with the majority of the ingredients put into a smoothie bag the night before. Made with 1/2 cup berries, 1/4 banana, 1/2 zucchini, handful of spinach, 2 T PB2, 1/3 cup kefir, 1 scoop brown rice protein powder and almond milk to combine and topped with cereal, cacao nibs and peanut butter.
No morning snack was needed today (i.e. I didn't get hungry), so I didn't eat again until lunchtime. Lunch was a turkey burger, 1/2 sweet potato, spinach, olives all topped with (organic, no high fructose corn syrup) ketchup and mustard (I know, sounds weird- but it tasted awesome!) plus an energy bite.
Afternoon snackage was tuna salad (made with 1/2 can tuna, wasabi mayo and Greek yogurt) stuffed in sweet peppers and carrots with a PB yogurt dip (PB2 and Greek yogurt mixed together). I ate about 1/2 the PB yogurt dip and carrots pictured.
Dinner was a recipe test success, coming to you on Friday! Kombucha marinated chicken with mashed potatoes (made with a little bit of coconut cream and curry powder) and grilled asparagus. I made a ton of this chicken and ate it on top of salads the rest of the week for lunch. And this is a pic with broccoli, not asparagus ;) (I took this pic a couple days later, but it was basically the same meal!)
And lastly, I finished the night off with PB2 mixed with kefir, topped with blueberries, a dollop of yogurt, 1/2 sheet of graham cracker and lots of cinnamon. I know this sounds weird, but I LOVE this nighttime snack!
