What I Ate Wednesday

What I Ate Wednesday is a popular link-up between food bloggers, started by Jenn at Peas and Crayons, to showcase what they typically eat in a day. Time for another round of WIAW my foodies! This is from yesterday since I waited until the last minute to write this :)

As usual, I woke up and had a pint of water with lemon that I drank immediately, and then a shot of diluted apple cider vinegar. After that, I enjoyed a cup of Jacked Up Java.

Breakfast was a recipe I will be posting on this blog very soon! A protein-rich pancake bake made without protein powder. The pancake bake is made with coconut flour instead of wheat flour which makes it very light and fluffy, so delish! Topped with 1/2 container raspberry Siggi's yogurt and a dollop of plain Greek yogurt, 1 tablespoon of peanut butter, 1 tablespoon of cacao nibs and a sprinkle of frozen raspberries and blueberries.

Lunch was delicious, too! Monday night I made a big batch of ground chicken with carrots, jalapeno and kale flavored with chili, chipotle, hot sauce and smoked paprika. I added this on top of spinach with tomatoes, 1/4 avocado, about 1/2 cup of millet (a type of ancient whole grain), half of a lime and a dollop of plain Greek yogurt (acts like sour cream adding tangy flavor and creaminess). I finished the meal off with 1 small mandarin orange.

Snackage today was a brown rice cake with Boar's Head deli meat and about a tablespoon of spicy hummus (can you tell I love spicy foods?!) and a blueberry energy bite. No recipe used for the energy bite, but I will be posting the recipe for my cinnamon maca energy bites on Friday!

What I Ate Wednesday

Dinner was Greek beef tacos, except in a whole wheat pita wrap. Recipe based off this one, except I didn't add feta because I didn't have any on hand (wish I would've!) Pita wraps stuffed with sauteed kale, tomatoes, olives and greek beef mixture (grass fed beef with parsley, oregano and sea salt) topped with yogurt sauce (made with plain Greek yogurt, a  dash of EVOO, dill, sea salt, lemon juice).

I ended the night with a bite (about 1/2 of a piece) of my paleo and vegan fudge!
