What I Ate Wednesday
Happy Wednesday! I am back for another round of What I Ate Wednesday...everything I ate this past Monday!
Monday morning Nick and I go to the gym before work, so before we went I had a cup of coffee blended with collagen, maca, stevia and coconut cream. Plus two dates.
When we got back, I showered and then devoured breakfast. Roasted garlic chicken sausage, kale, cabbage and roasted radishes and delicata squash all cooked in ghee and topped with raw 'kraut. I am ALL about savory breakfasts lately.
On the way to work I had a matcha latte and once I got to work I was already ready for my morning snack. So I ate it, even though I had just eaten breakfast recently! My morning snack was cinnamon roasted carrots, plain full fat Siggi's skyr yogurt, a little bit of peanut butter and cacao nibs. I finally bought the full fat yogurt and y'all, it is SO delicious. It literally needs the smallest dash of honey to taste absolutely phenomenal. I love how fat always adds so much FLAVOR to foods!
Lunch was PaleOMG spaghetti squah pizza pie topped with a little bit more marinara sauce and olives. It was quite ugly looking but super yummy, so here's a recycled pic of when I made it a long time ago. I also had a brownie made with coconut oil, maple syrup, cacao powder and coconut flour. It was alright...not good enough to make again!
Afternoon snack was plain TJ's kefir with a dash of honey, cinnamon and ginger added. It's my new obsession. I also had some deli meat (no picture) because it was in the fridge and needed to be eaten. #truth #ihatefoodwaste
When I got home from work, I took Porter on a walk and then started writing this post and sipping on homemade chicken bone broth. Bone broth and collagen are something I am increasing in my diet to help my gut (which has been damaged from years of IBS) repair and heal itself. Plus I think it's tasty :)
Dinner was one of my favorites...locally caught redfish thanks to the hubby! Grilled to perfection and eaten with leftover roasted vegetables from the night before.
Lastly, dessert was the usual turmeric milk plus baked apples topped with almond butter.
