What I Ate Wednesday

Good morning and happy Wednesday! Today's eats are from last Tuesday.

As usual, as soon as I woke up I drank 4 cups of warm water and a shot of diluted apple cider vinegar. Followed by a cup of coffee, Jacked Up Java style.

I then did a very quick BUTI yoga session and mainly yin yoga as that is what was my body was craving.

After showering, I put together breakfast: roasted sweet potato (roasted during food prep), 2 eggs and a cashew hollandaise sauce. 'Twas delish.

My morning snack was cinnamon roasted carrots topped with peanut butter and a small portion of paleo pumpkin bar via the lovely Hummusapien.

Lunch was  a spinach salad topped with rotisserie chicken from Rollin Oats, sweet potato wedges (just a few), plantain chips and roasted broccoli. Topped with a homemade salad dressing made with EVOO, maple syrup, ACV and a bunch of spices including cayenne, oregano and s/p. Plus a few bites of my beloved dark chocolate covered coffee beans.

Afternoon snack was a banana topped with peanut butter and cacao nibs. I totally didn't pack enough food (accidentally) this day so I was SO happy that I had just thrown the entire peanut butter jar in my bag because I would have been STARVING all day without it (a bit dramatic, Victoria...)

What I Ate Wednesday

Peanut butter used to be a food I had ZERO control over, I would scarf it down because I loved it so much. When I let go of yo-yo dieting and restrictive eating (because it never works) I was able to control myself around my favorite foods (like peanut butter, ice cream, etc). Now I can easily eat the amount I need, which is sometimes 1/2 tablespoon and sometimes its 2 tablespoons (estimated portions of course).

Dinner was this chicken tortilla soup with kale from Fit Foodie Finds. Topped with 1/2 small avocado and a few tortilla chips.

I was still pretty hungry after dinner though, so I made a dessert-smoothie-nighttime snack for Nick and I. Made with so many goodies: pineapple and berries, zucchini, kale, spirulina, raw cacao powder, PB2 and almond milk. Topped with a few of TJ's pumpkin O's (I think they are just meh, won't buy them again), a bite of the paleo pumpkin bars and pomegranate arils.

No turmeric milk this day, I ended the night with marshmallow root tea. I drank lots of water this day. I have no idea how much but I usually drink 1-2 gallons a day.
