What I Ate Wednesday
It's that time again! Here's everything I ate last Tuesday! You know how my days start....wake up and have a quart of warm water followed by a shot of diluted apple cider vinegar.
And then Jacked Up Java. I base the amount of MCT coconut oil I put in my coffee based off how I am feeling and what my body is telling me. This day I chose to put 1/2 T of MCT coconut oil and 1 T coconut cream. Plus the other usuals. Wondering why I drink my coffee blended with so many goodies in it? Read this post to find out more!
I then did my favorite BUTI yoga followed by foam rolling, meditation and a cold shower.
Breakfast followed shortly after, around 6:30am, and is my FAVORITE breakfast right now. I am going to add a recipe to the blog soon! Savory golden oatmeal (golden = turmeric added) with 2 farm fresh eggs, smoked paprika almond butter and a dash of honey. This day I also added a few pomegranate arils.
On my way to work I had a matcha latte. And another quart of warm water with lemon added this time.
I usually have a mid morning snack but wasn't in the mood for one today so I just ate lunch earlier, a little before 11:30am. Lunch this day (and all last week) was turmeric chicken tenders, massaged kale with added cranberry hibiscus, roasted peppers and carrots in coconut oil, roasted kabocha squash, mustard and a ginger/ACV dressing. Plus a bite of 85% dark chocolate, duh.
I was really hungry a few hours later, around 2:30pm, so I packed an almost empty almond butter jar full of goodies. Including 2 petite sweet potatoes, plain Greek yogurt mixed with TJ's PB&J Greek yogurt and PB2, cacao nibs and like a bite of paleo pumpkin bars.
It was delicious...but unfortunately the yogurt made my stomach hurt! Sometimes I can tolerate dairy fine and other times it immediately causes me GI issues...so for now I am taking a break from all dairy (on a daily basis, I am of course still going to eat ice cream and cheese as I desire because hashtag no food rules).
Dinner was a recipe test for a recipe coming soon to the blog. Spaghetti squash beef pad thai, except I used some ground bison I picked up at our farmer's market the weekend before. The recipe is almost perfect and almost ready for the blog!
Minimal amounts of carbs at dinner = me still hungry an hour later. So I made Nick and I a big batch of smoothie bowls that included...papaya, mixed berries, coconut water, cacao powder, spirulina powder (a new addition to my diet!), some leftover Greek yogurt I needed to use up and a wee bit of coconut sugar. Topped with cacao nibs and pomegranate arils for that crunch factor.
I ended the night like I usually do these days, with a mug of turmeric milk. Here's a recipe on my girl Meg's blog if you are looking for one!
