What I Ate Wednesday
Happy Wednesday my foodies! Can you believe its already October? Like its already football season, which means its almost time for the holidays which means its almost 2017?! Ohmygoodness. This day of eats is from this past Monday, per usual! I started the day off as I always do...a shot of diluted apple cider vinegar and a quart of warm water. Shortly followed by a cup of Jacked Up Java (made with 1 tsp of MCT coconut oil and 1 T coconut cream).
I then did a quick session of BUTI yoga, rebounding, more yoga and meditation. Followed by a quick cold shower and then breakfast!
Breakfast today (and for the week) is savory oatmeal with 2 farm fresh eggs, 'kraut, and about a tablespoon of smoked paprika almond butter. I used to hate savory breakfast foods but all the sudden I cannot get enough lately! #alltheeggs
(P.S. To make savory oatmeal, just make it with unsweetened milk or water and add salt and pepper. Kind of like grits, but even better in my opinion!)
During my long drive to work this morning, I also enjoyed a matcha latte.
Morning snackage included a pumpkin muffin and a few nuts (hazelnuts, pepitas and pecans, I probably had a couple tablespoons worth).
Lunch was leftovers from my recipe test of Turmeric Coconut Chicken Tender Wrap with Honey Mustard Spread. Except eaten with just the chicken tenders, roasted delicata squash and a side of dressing made with EVOO + ACV + ginger + honey. I also had some TJ's plantain chips with this.
Dessert was a bite of 72% dark chocolate and about an hour later (I was still hungry) another pumpkin muffin.
And a little later on this kombucha most definitely happened.
Afternoon snack was Siggi's raspberry yogurt with a few nuts added on top.
And dinner was enjoyed out with friends celebrating a birthday (happy birthday Sarah!) All the sushi plus a glass of red wine :)
To end the night, when I got home from dinner I made a big cup of turmeric milk and relaxed with my hubby and animals. Twas a great night for a Monday!
