What I Ate Wednesday
Happy Wednesday! Here's to another WIAW showcasing what I ate this past Monday... The day started off at 5am with a quart of warm water, a shot of diluted apple cider vinegar and a cup of Jacked Up Java.
I also had a small banana before my morning workout. On Monday, I did one of my favorite moderate intensity/spiritual healing/makes me so happy exercise: BUTI yoga. BUTI yoga mixes yoga with plyometrics, tribal dancing and a lot of other funsies stuff (like shaking your booty in downward dog!) Highly recommend it!
After working out, I had breakfast. Sweet potato wedges + kale + smoked apple chicken sausage (from Trader Joes) all cooked in ghee and spices (cinnamon, smoked paprika and ginger). Topped with smoked paprika almond butter that I food prepped the day before.
On my way to work I made a matcha latte, and added a scoop of collagen peptides.
By the time I got to work I was already pretty hungry again, so I had my mid-morning snack super early (like 8:30am). A half portion of make ahead steel cut oats with PB2 added and topped with the smallest dash of raw sugar, peanut butter and cacao nibs.
This held me over for a long time and I ended up eating lunch around 12:30-1pm. I enjoyed a recipe test (success!)- fall salad with roasted Brussels sprouts and butternut squash (with sage and thyme), roasted chicken and a pumpkin spice tahini salad dressing. Although I was hungry, it quickly diminished and I ended up saving about half this salad for later.
I, of course, ended lunch with a delicious bite of dark chocolate. YUM.
Afternoon snackage included a pumpkin muffin (made with almond meal and oat flour, so moist yet no added oil!), the rest of my salad and a couple mandarin oranges.
Dinner was an egg hash. We ALWAYS have this the night after we roast a chicken with potatoes, using the leftovers for the hash. And then I add a ton of vegetables, too. And then eggs. And cheese (just for Nick, I topped mine with sauerkraut). It's the best!
After dinner, I enjoyed a cup of bone broth for some extra glutamine in my diet (found in both the bone broth and collagen, to help repair my gut lining).
And for dessert I had turmeric milk made with homemade cashew milk. I've been having turmeric milk almost every night lately, it's become a part of my nighttime routine and I love it. With the turmeric milk I enjoyed a random concoction of PB2, Artic Zero snickerdoodle ice cream and TJ's pumpkin O's. It was meh...I liked the brownie batter ice cream by Artic Zero but the other flavors lacked flavor and taste in my opinion.
