What I Ate Wednesday

Happy Wednesday my foodies! I am back for another round of What I Ate Wednesday! I am finally settling into a routine again after a crazy summer of traveling, weddings and moving. I am looking forward to getting back to a regular posting schedule and bringing you all some awesome posts again! To start next week!
This day of eats is from this past Thursday.
You guys know how I always start my day, as soon as I wake up (put on a robe, glasses and tongue scrape) I chug a quart of warm water followed with a shot of diluted apple cider vinegar. This was soon followed by my Jacked Up Java (lately I have been doing a teaspoon of MCT coconut oil and 1 T of coconut cream).
Breakfast was a loaded sweet potato. Probably a medium sized potato, roasted during food prep and reheated. I added a little bit of PB2 and almond milk to the sweet potato, to make a sort of 'porridge' and topped it with blueberry Siggi's yogurt, Legendary Foods blueberry cinnamon roll cashew butter (SO good) and granola. So delish!

Morning snackage included a couple cinnamon chickpea energy bites. These were good, but not recipe worthy.

Lunch was 1/2 package of TJ's frozen superfood blend with sweet potato, kale, quinoa and some other goodies that I cannot remember right now. I also added spinach, turkey burger and lotsa Dijon mustard. Last week we were still living half in our house & half in another apartment so I was still relying on pre-prepped foods. Trader Joes to the rescue! Not going to lie though...it feels so good this week to not be moving, and to have my usual foods!

I  think after lunch I also had a LIVE soda kombucha and a bite of chocolate. I think?
Afternoon snacks included a can of wild tuna with chipotle hummus and a fruit bar.

Dinner was quick and we had no ingredients in the house so I just had some broiled salmon (topped with olive oil and honey) and sautéed vegetables. I overcooked the salmon so this meal was just blahhhh.

And because my dinner was teeny-tiny I was still super hungry afterwards. Nick and I split a large batch of banana nice cream topped with my beloved cinnamon Puffins, Legendary foods PB cup nut butter and a small sprinkle of cacao nibs. I received samples of the Legendary foods nut butters and each has been SO delicious!
