Most of What I Ate this Past Weekend
Alright guys...I am thinking about bringing daily eats posts back to weekly because you guys REALLY seem to love them. Would you like me to bring them back to weekly? Comment below and let me know! I am going to switch it up today and share most of what I ate this past weekend...this isn't an inclusive list though, just everything I remembered to take pictures of! This particular weekend Nick and I made the financial decision to NOT eat out at all, which is unusual because on the weekends we probably eat out 1-2 times. But the weekend before we had spent quite a bit of money so we were trying to balance that out this weekend. Also, this weekend was the few days before my cycle started and I had some narley chocolate cravings. So I honored those cravings! In MANY more forms of...chocolate. Chocolate covered with PB. Homemade paleo fudge. Chocolate ice cream. Chocolate covered coffee beans. YUM.
So let's start with Friday night.
It started with wine. I LOVE sipping on a glass of red wine while cooking dinner. Anybody else? Like its SO relaxing. I don't do it every night because I don't feel great when I drink nightly, but a couple nights a week, that's my JAM.
Dinner was a recipe test success! I was inspired by this AMAZING meal I had for brunch the prior weekend. So I tried to recreate it at home, with my own spin of course! Whole milk grits (I would have added cheese but was all out, so sad), crumbled bacon and I used the leftover grease to cook collard greens topped off with maple syrup as well as cooked the shrimp in it and seasoned with Old Bay seasoning. So delicious.
For dessert, Nick and I shared some paleo fudge (recipe should be coming to DF soon but here's another one for now!) and a few more sips of wine ;)
The next morning, I had a couple cups of Jacked Up Java. Both half caffeinated.
I had a 10am appointment with a client, and wasn't hungry before it began so I waited until after the appointment to eat. I made this for Friday late breakfast/brunch/lunch and Saturday, too. Bacon (uncured, nitrate free), eggs, spinach, saurkraut and olives.
At some point after eating that I also had chocolate. 88% dark chocolate smothered in PB, a bite of paleo fudge and a few sips of whole milk.
That kept me satisfied and full until dinner! For dinner I had been craving nachos, so I went ahead and did my grocery shopping for the week so I could pick up the ingredients to conquer my craving :)
Tortilla chips with grass fed beef seasoned with taco spices, sauteed zucchini + bell peppers + cabbage, raw dairy cheese, jalapenos and melted until crispy and gooey. Topped with sriracha and kimchi (Nick topped his with salsa but since I cannot tolerate FODMAPs in onions and garlic right now I omitted this for me). This HIT THE SPOT.
Oh, and a glass of wine this night too! So relaxing, just what my soul needed this weekend!
And to continue my chocolate cravings, I satisfied them that night with chocolate ice cream + toppings (peanut butter, cacao nibs, chocolate covered coffee beans). I bought organic with minimal ingredients but honestly buy whatever you want! The main thing I was looking for was real ingredients, no fake ice cream.
On Sunday morning, I did my usual morning routines. Had some matcha latte, too.
Still craving sweets and hungry, I had a big yogurt bowl that morning for a late breakfast. Full fat Siggi's plain yogurt topped with toasted coconut flakes, peanut butter, a few chocolate covered coffee beans and cacao nibs. After I took this picture I added cinnamon, too.
For lunch this day I had some Maple Hill raw dairy cheese, spinach, 'kraut, smoked herring, olive oil and mustard. I'm looking for some new ways to get my weekly fish consumption in and this was delicious! Still working on enjoying sardines 'cause I really want to because they are amazing for you...but not gonna lie they are hard for me to eat! Anyone else?!
Oh and heyyyy there's Meg and I! We took some pictures for our website and practice on Sunday and had a couple Sangrias spiked with brandy beforehand. 'Twas perfection :)
And for dinner this night, we had leftover nachos from the night before, except I had mine on potatoes roasted in duck fat. The tortilla chips destroyed my stomach the next morning so I chose to not consume this day 2 :)
